Bread, pastries and jams, made where you buy them
Silo is a bakery and a small cafe on Giles Street. The sourdough, the tarts, the croissants and the jam on your toast are all made on the premises, Tuesday to Saturday, and sold until they run out.
Two things at once
A bakery first
Rye and white sourdoughs, vollkornbrot, stirato, baguettes and ciabattini come out of the same ovens as the tarts and the breakfast pastries. Some loaves only appear on certain days, which is what happens when a bakery bakes rather than reheats.
A cafe second
The kitchen cooks a short menu that leans European — omelettes, eggs done properly, a tarte flamiche, a steak sandwich on their own focaccia. Breakfast runs all morning; lunch starts at eleven.
Worth the trip
Silo has been written up well beyond Canberra, and the queue on a Saturday morning makes the same argument more directly. Come early if there is something in particular you want.
What people have said
“part Brooklyn, part wartime Parisian bakery”

Before you come
| Tuesday to Saturday | 7am – 3pm |

| Sunday and Monday | Closed |
Table bookings are taken for lunch only, Tuesday to Friday. There are no bookings on Saturdays — that one is first in, first served.
Ordering ahead
Most orders can be placed by phone or email up to the day before pickup. Cakes need three days. Larger tarts need twenty-four hours, and the gluten-free frangipane tarts and the bigger quiches have to be pre-ordered — they aren't made speculatively.
