Week 10 Prep: Food safety and the cold chain
A hands-on exercise computing a safe-until time for the raw materials and the already-prepared leftovers this course has handled since week 2, using the same cold-chain rule throughout.
26 April 2027
Every material this course has stored since week 2 answers to the same clock; this exercise is where that clock is actually run, rather than only stated as a range of days.
Exercise#
Choose a raw material below — poultry, ground meat, a whole cut, or an already-prepared leftover — enter the time it was refrigerated, and read off the time by which it must be reheated to a safe temperature, refrozen or discarded. Repeat for a material held at room temperature to see how sharply the danger-zone rule shortens the same clock.
Compare the safe-until time for raw poultry against a whole cut of red meat prepared at the same moment: the gap between the two is the anatomical argument from weeks 3 and 4, expressed here as a difference in hours rather than in muscle structure.
The spec
What you bring to the session. Written so a reader can tell whether it has been met without asking you.
- you can compute a safe-until time for at least one raw material and one already-prepared leftover using this week's calculator
- you can state which of this week's items carries the shortest safe window and why (danger-zone exposure, not anatomy)
- you can name the source the calculator's durations are drawn from
