Week 5 Prep: Spices, aromatics and oil
A hands-on exercise computing how long a cut allium or a prepared leaf herb can wait before it must be refrigerated or discarded.
22 March 2027
Deciding how long a chopped or crushed allium can wait before it must go into the pan or the refrigerator is a preparation decision distinct from what the cutting itself does to its flavour, which is the lecture’s subject.
Exercise#
Enter a preparation time for a chopped or crushed garlic, onion or shallot held at room temperature and read off its safe-until time. Repeat for the same item refrigerated, then for a prepared leaf herb, to see how differently the three clocks run for material handled in the same week.
Read the note attached to each refrigerated result: USDA publishes no allium- or herb-specific refrigerated figure, so the calculator applies its general window for cut, perishable food at the shorter, more conservative end. Teaching the concept without a fabricated number is the same rule this course applies everywhere a figure cannot be sourced.
The spec
What you bring to the session. Written so a reader can tell whether it has been met without asking you.
- you can compute a safe-until time for a cut allium or a prepared leaf herb using this week's calculator, given a preparation time
- you can state how much longer a refrigerated item's safe window is than the same item held at room temperature
- you can say why this week's refrigerated allium and herb items apply a general storage window rather than an allium-specific one
