Desmond spent seven years as a municipal health inspector, which mostly means he has read more restaurant kitchens’ worst days than their owners would like. He teaches students to treat a health-inspection record, a one-star review and a delivery app’s cached menu as witness statements — each partial, each with its own reason to exaggerate or stay quiet — rather than as gossip to be believed or dismissed on the spot.
He runs the weeks built on evidence you have to interpret rather than sum: building the case file, tracing the review history for the point sentiment actually turned, reconstructing a service failure from conflicting accounts, and the bias-hunting pass on why the Autopsy Report often lies to its own author before anyone else reads it.
